Oetker Collection to open luxury hotel in St Tropez (2027)

Luxury hotel group Oetker Collection will open a new hotel in St Tropez, in time for the 2027 season. The 53-room hotel, developed in partnership with the Pariente and Essebag families, will be built on the former Le Mas Bellevue site, marking the latest addition to Oetker’s portfolio of Masterpiece Hotels.

Designed as a peaceful sanctuary, the property will unfold like a hamlet with two-storey outposts offering panoramic sea views. Located between St Tropez town and Pampelonne beaches – both five minutes away – each room and suite will feature private terraces or patios overlooking the Mediterranean.

French interior designers Patrick Gilles and Dorothée Boissier, alongside architect Olivier Raffaelli, have conceived a sophisticated yet understated retreat, with a design that incorporates authentic Provençal elements including aged tiles, local stone, climbing vegetation and wooden pergolas.

«Everything here is immediate, near, as if immersed in the essence of simplicity,» explains Boissier. «Raw, brushed, and moulded wood panels embrace the room like a jacket carefully placed on bare shoulders. The colours of Saint-Tropez – delicate pastels, warm ochres, and subtle pinks – combine harmoniously with the sunlit, red-tiled roofs.»

The property will feature an oversized infinity swimming pool, extensive wellness facilities, and dining venues with sea views. The lobby will showcase textured plaster walls with delicate patterns and white stone flooring, while Roman-inspired arches will stand alongside wooden beams reminiscent of traditional local farmhouses.

Landscaping emphasises privacy, with native plants, olive trees, and artfully designed gardens creating a secluded environment. The development follows Oetker’s recent opening of Hotel La Palma in Capri and the forthcoming Vineta Hotel in Palm Beach.
